Color measurement of baking ingredients
Baking ingredients such as starch, baking powder, flour or semolina, as well as ready-made baking mixes, are subject to high quality standards.
They form the basis of many types of pasta and manufacturers and processors must guarantee controlled quality. Visual comparison with the human eye does not meet this requirement.
The end consumer also places high demands on the food product used for baking and cooking.
Instrumental measurement with highly developed spectrophotometers, on the other hand, is easy to use both in the laboratory and in production and provides the exact control required for quality management. Powder samples are usually placed in cuvettes on the colorimeter and the measurement results are available within a few seconds. Integrated colorimetric software supports the evaluation and further processing of the measurement data.

Application example:
Powdered baking ingredients such as flour, semolina, baking powder or starch, as well as ready-made baking mixes, can be precisely colorimetrically determined using a spectrophotometer such as the ColorFlex EZ. In this way, manufacturers guarantee a consistent appearance and create trust in the product. Powders consist of tiny particles. To ensure uniform color measurement, a uniform surface should be created. For this purpose, a generous amount of powder is added to a 64 mm round glass cuvette. Sufficient coating thickness minimizes the effects of incident ambient light and guarantees precise measurements. (A layer thickness of 50 mm also makes translucent powder effectively opaque for...
